Gingerbread Cupcakes

As Christmas is just round the corner I thought I would bake some gingerbread cupcakes. Especially as everyone loves gingerbread at Christmas time. And I just love to bake. Also check out my youtube channel hannahxoxoblog. I hope you enjoy!

Ingredients for Cupcakes:
• 75g unsalted butter, softened
• 100g caster sugar
• 125ml black treacle
• 1 large egg
• 1 large egg yolk
• 175g plain flour
• 1 tbsp cocoa powder
• 1 1/4 tsp found ginger
• 1tsp ground cinnamon
• 1/2 tsp ground allspice
• 1/2 tsp ground nutmeg
• 1/4 tsp salt
• 1 tsp baking powder
• 125ml hot milk
• cupcake cases
• gingerbread sprinkles

Ingredients for Buttercream Icing:
• 240g butter, softened
• 400g icing sugar, sieved
• 2 tsp vanilla extract
• 4 tbsp milk

Method:
1. Pre-heat oven to 175°C / 350°F / Gas mark 4
2. In a large bowl, cream together the butter and sugar.
3. Then add the treacle, egg and egg yolk and mix.
4. In a separate bowl, sieve in the flour, cocoa powder, ginger, cinnamon, allspice, nutmeg and salt.
5. Add the flour mixture to the creamed butter mixture and stir until combined.
6. Carefully heat up the milk but be careful not to boil it, and the dissolve in the baking soda. Then add to the other mixture.
7. Line a muffin tin with cupcake cases and spoon the batter evenly into the cases. Bake for 20 minutes or until slightly springy to the touch.
8. While the cupcakes are cooling, you can make the buttercream: Cream the butter in a large bowl until smooth gradually adding the icing sugar and continue to cream until light and fluffy. Add the vanilla and milk, and cream until combined.
9. Spoon the buttercream into a piping bag fitted with a large star nozzle. And pipe on the buttercream and top with gingerbread sprinkles.
10. Enjoy!

Moving..

Recently I have moved house. The whole process was quite exciting for me. When we have moved house previously I have always been quite young and don’t really remember moving properly. Therefore, I thought I would share my experience with you.

Once our house was up for sale, we started viewing other house’s. I never realised how hard it is to find a house that is right for you. We looked at so many different house’s but finally found the perfect house. Once we bought the house I started to pack up my things. First thing I did was start to clean out my room. I was surprised on how much stuff I had (a lot of it I didn’t need). Things that weren’t worth keeping I put in the bin, and other stuff I sold. Once, I cleaned out my room and was left with the stuff I still wanted and needed, I started to put my things in boxes. I decided that I would buy new furniture when we move house as all the furniture I had was breaking. We took a trip down to Ikea and bought some new furniture. At this point I was very excited to move house. I finished packing away my thing’s in my room and putting them into boxes. I did manage to put all of my clothes into a normal size suitcase and carry on suitcase (except my coats and shoes that went into a box). The thing’s I needed to use and get to easily I put into my carry on suitcase or in my other ted baker bag. These things were mainly my toiletries, clothes, make up, hair brush, chargers, etc.

Our new house is a 30 minute drive away so I tried my best to pack my car with all my things so I we were out of the house in time. I ended up taking half of my things in my car, and the rest of my things my dad took in the moving van. I drove Alfie (my dog) with me in my car so I could keep an eye on him and make sure he was alright. When we got everything out of the house and drove to the new house we started unpacking the cars. I put all my box’s in my room and started to unpack. I needed to build all my furniture so it has taken me longer than expected. I have also found that it takes longer to unpack then pack (which I wasn’t expecting to be honest). I am still unpacking and organising my new room till this day. It was quite sad leaving our last home since I lived their for 13 years. But, I can’t wait for all the new memories in our new home.

I hope you enjoyed reading and I hope to see you soon! Bye!

Christmas Decorations

One of my favourite things about christmas time is decorating the house and putting up the christmas tree. Today I thought I would share with you how I decorate my bedroom in Christmas time.

A christmas tree is essential, even if you have a mini christmas tree. I have a mini christmas tree in my room and I have decorated it with silver and a touch of gold. I have actually decorated Casey’s room as well with the theme of red. I haven’t put tinsel on my tree as I quite like how it looks without. I have put a few random baubles on mine and Casey’s tree as I like how it looks. Again a stocking is essential. Me and Casey actually got ours from Home Bargains and you can personalise the top to spell out your name.

Fairy light’s are perfect for making your room look all cosy. I have actually put some around my window. I think it looks so cosy and you can see the lights from the outside. There is normally a choice of cool lights or warm lights and I have gone for a mixer as I really like them both. A candle is also another perfect way to make your room look even cosier. I have actually have a different candle thing from Yankee Candle. You put a tea light on the bottom and your chosen scent on top and the heat burns the wax, melting it and given off the scent. The wax thing I have chosen is in the scent ‘Cosy By The Fire’. I absolutely love these and are a great idea.

Putting tinsel around your house/bedroom is a lovely little touch to make your room that extra christmassy. I have put some red tinsel on Casey’s bed for an extra touch of christmas. Another extra touch is a hanging ‘Merry Christmas’. I have one in Casey’s room and I think its such a cute little extra thing. Obviously you must have some seasonal bedding. I have a tartan/checkered duvet set for my room, and I have gone a little more Christmassy with Casey’s bedding. Again red, with a white and grey throw (excuse the emoji pillow haha).
